Chunks. Chunks burn more slowly than chips, and often a chunk or two about the size of an egg is all that is needed for a lot of food. Because they are a slow, steady sources of smoke, they are in many ways, the most desirable. When you use chunks, you can add one or two at the start of the cooking cycle and you don’t need to keep opening the unit and mess with the equilibrium in the cooking chamber’s atmosphere. Chips. Chips burn quickly and you may find that you need to add them more than once during the cooking cycle. Chips are ideal for shorter cooking times, but for longer cooking, chunks are better.

Features
Hickory Chips and Chunks	Hickory smoking wood creates a sweet, yet strong bacon-flavour; the smoke can be pungent, but it adds a nice, strong flavour to just about all meat cuts, but it’s especially popular with pork and ribs. Maple has a mild and slightly sweet flavour
Mesquite Chips and Chunks	This one is in a category of its own. It can be harsh and bitter if used incorrectly, but strong and have an earthy flavour if used correctly. It is an oily wood so it burns strong, hot, and fast. Since it burns so fast, it’s not ideal for long barbecues. It’s extremely strong flavour holds up well to dark meats, but it would be a terrible choice for lighter poultry or fish. Blending this wood is definitely recommended to get until you get to know how it works.
Apple Wood Chips and Chunks	This fruitwood is mild, fruity, and subtly sweet. Good for all-purpose smoking needs. It’s particularly popular with poultry, pork (especially ham), lamb, and sometimes seafood. It works for beef, but its flavour is so delicate it doesn’t hold up to red meat’s heavy flavours so a lighter wood is recommended
Cherry Wood Chips and Chunks	Cherry is another great all-purpose fruitwood for all types of meat. Its sweet and mild flavour works well with beef or pork, and the smoke turns meat a rich, mahogany colour. This smoking wood mixes well with hickory, oak, pecan, or alder
Jam Chips and Chunks	Jam is of the Acacia tree. It offers a long hot burn, so small amount of chunks is all that’s needed to give off a subtle sweet raspberry scent and smoke flavour, which goes well with pork, chicken & lamb. Peach Wood is a rare soft wood that has a sweet smoky finish. Can be mixed with any type of wood to give a stronger unique flavour Peach Wood Chips and Chunks
Pear Wood Chips and Chunks	Pear wood is a beautiful light and mild with sweet smoke. Pear wood chunks are excellent when smoking Chicken, Pork and Seafood.
